Amritsari Kulcha Recipe
Ingredients
For Dough:

1/3 cup sooji
- 2 1/2
cups all-purpose flour (maida)
- 1
cup curd (plain yoghurt)
- 1/2
tsp baking soda
- 1/2
tsp baking powder
- 2
tbsp oil or ghee
- Salt
to taste
- Water
(as needed)
For Filling:
- 5
medium potatoes (boiled and mashed)
- 2
small onion (finely chopped)
- 2
green chillies (finely chopped)
- ½
tsp red chilli powder
- ½ tsp
ajwain
- ½ tsp
jeera powder
- `/2
tsp red chili powder
- ½
tsp garam masala
- 2
tbsp coriander leaves (chopped)
- Salt
to taste
To Cook:
- Butter
or ghee (for brushing)
- chopped
coriander (for topping)
Instructions
Add sooji in a bowl and add water let it rest for 10 minutes

Dough
After 10 minutes add flour, salt, baking powder, and baking soda. Add curd and oil, mix well. Gradually add water and knead to a soft stretchy dough. Cover and rest for 5-6 hours. - Prepare
Filling
In a bowl, combine mashed potatoes with onion, chillies, spices, and coriander. Mix well. - Assemble
Kulcha
Divide dough into balls. Roll one slightly, place filling inside, pinch and seal. Gently roll out again (not too thin). Sprinkle coriander, press lightly. - Cook
Kulcha
Heat oven at 220 C. Cook kulcha till golden spots appear. Flip and cook the other side. Brush with ghee or butter generously.
